The goal was to build a culinary concept that merged timeless gastronomic staples with unexpected, high-quality ingredients from around the world, crafting a unique, ever-surprising dining experience to captivate every guest.

We designed a dining experience full of contrast and nuance, where nothing is fixed, and every bite resonates differently. Unexpected pairings and daring flavors come together with no rules or restrictions.

And so, IMPAR was born the most casual, laid-back culinary space at SOFIA. The concept inspired every detail: uninterrupted kitchen service, three interior bars, and a menu featuring odd-numbered pricing and portions. The result is a distinctive space where flavors are lived without rules or schedules.
